A new Irish Cookbook was released last month written by Cathal Armstrong and David Hagedorn. I came across it reading an interview the author Armstong gave to Reuters’ Richard Leong. Dublin-born Cathal Armstrong a celebrated chef of several Washington D.C. area restaurants responds to the following question:
“Q: What is your “go to” ingredient at home?
A: Sriracha sauce” I love it! The entire interview is linked at the bottom.
We’re are happy to hear spicy condiments are working their way into Irish fare more and more. Baby Swiss cheese
Corned beef slices

Take your cocktail rye bread and spread McCoy’s Irish dressing on it. Add one teaspoon of sauerkraut, corned beef and top off with baby Swiss cheese. Place under the broiler until cheese bubbles.

The Califoria Department of Health has issued an order to stop Sriracha hot sauce from being shipped for at least 30 days. This is to comply with food safety regulations.

Make some Irish Tea Cupcakes for the holidays. It will liven up your Christmas party!
1/2 cup butter
1 cup white sugar
1 1/2 teaspoons vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
Preheat oven to 350F
In medium bowl cream together the butter sugar until light and fluffy.
Beat in the eggs one at a time then stir in vanilla.
Combine 1 3/4 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon salt add to batter alternately with 1/2 cup milk.
Pour batter in cup cake tin only fill tin a little over 1/2 way up.
Bake 30-35 minutes until toothpick inserted in center comes out clean, Cool dust with powder sugar.

If you like the taste of Guinness, believe it or not a lot people don’t. It has a very dark bold taste. However if you truly love the taste of Guinness you will love this brisket marinade recipe. You can literally taste the Guinness in the meat after it’s cooked.
Get yourself a nice 1.5 – 2lb brisket and a big plastic container to hold the brisket and the below marinade contents and let it sit at least three hours. I let mine site literally over night. Cook your brisket however you normally do following meat temperature safety standards. As you can see in the image I posted I cooked mine slow over an oak wood fire pit. I left the brisket wrapped tight in aluminum foil with a lot of the marinade in the foil. Once it was cooked I unwrapped it and cooked it exposed to get some crisp bbq flavor on the outside. If you try this take pics, and let us know how it went.
