Homemade Irish BBQ Sauce

We all have our favorite BBQ sauces. I’m a big fan of Sticky Fingers ( Sticky Fingers, BBQ Sauce, Dark Memphis Style, 18oz Bottle (Pack of 6) ) and Budweiser BBQ Sauce (Budweiser Genuine Sauces Gift Set, 6 Pack)

However most of the time I make my own BBQ sauce. I’m sure most of the people reading this blog have at some point made their own sauce. Even if that means mixing up left over half emptys of random BBQ sauces in the fridge.

My fridge always has a bottle of THIS (Thick Hot Irish Sauce) You’re probably not surprised being its a product we produce from my own family recipe.

Here’s my homemade recipe using THIS as a base which makes it an Irish BBQ sauce. Try it out, tweak it, let us know what you think.

1 cup of THIS

1 tbsp molasses

1 tbsp lemon juice

Mix well in mixing bowl and add honey (to taste) if you like it sweeter.

Use mild THIS if you don’t want it too spicy.

Bacon and Cheddar Cheese Stuffed Chicken Breast Kabobs

Who doesn’t love meat on a stick. Better yet, who doesn’t bacon, chicken and cheese on a stick! Here’s a quick and simple recipe. Great for any meal or appetizer for a small get together. Compliments of Ainge Earney.




3 Chicken Breast

6 Strips of Bacon

Cheddar Cheese

Garlic Salt

Black Pepper (use cayenne pepper for spicy)


Cut chicken breast in half (like a hamburger bun) but not all the way through leaving enough meat to keep the breast together

Put chicken in plastic bag and pound down to about 1/4″ thick

Rub chicken with pepper and garlic on both side (use to your taste, but don’t use too much garlic salt as the bacon adds tons of salt. You could use garlic powder.

Lay chicken on baking pan sprayed with cooking spray

Put two slices of COOKED bacon and some cheese in the middle and fold over

Add toothpicks (or skewers) to hold breast closed

Cook on 350 for about 40 mins

About 5 mins before done add some cheese to the top..YUMMY!


Bacon on the Black Iron Skillet and Grill – Less Mess

Now that it is summer I love BLTs but I don’t like the mess on the stove and the clean up. I cook my bacon in my black iron skillet on the grill. I also cook 1 to 2lbs at a time depending if I have company. If I want to make BLTs or bacon and eggs for breakfast I just have to warm my bacon up. Great for working moms less work for you on clean up!

McCoy’s Spicy Irish Stew Recipe

We put our own Irish Stew recipe to the test. We entered the below recipe into the World Irish Stew Championship ( )

We didn’t win the grand prize but we made the short list. If anyone is looking for a culinary travel adventure I highly recommend visiting the Só Sligo Food and Culture Festival.


Here’s some useful information on Sligo in general.

At the very least we recommend whatever Irish Stew recipe you use don’t forget to top it off with a Mild or Hot version of McCoy’s THIS. We’re posting our recipe below for your enjoyment. Let us know what you think. If you make it please share pics to


McCoys Spicy Irish Stew

Spicy Irish Stew


2 tablespoons of olive oil

2.5 pounds of stewing beef

4 beef bouillon cubes

1 tsp salt

1 tsp freshly ground pepper

1 tsp of cayenne pepper powder

1 ½ large onions chopped

½ tsp minced garlic

2 tablespoons tomato paste

2 cups carrots chopped

6 petite red potatoes cut into pieces.

1 stalk of celery chopped

½ pound of sliced or chopped mushrooms

1 bottle of Guinness stout

28oz of diced tomatoes

1 sprig thyme

1 tablespoon of McCoy’s Thick Hot Irish Sauce

Heat oil in large pot.

Mix salt, pepper, and cayenne pepper in a bowl and mix. Season and sprinkle the mixture over the meat evenly.

Add meat to pot in heated all and brown on both sides then remove. Don’t do all the meat at once.  Small portions at a time until completed. After completed place all the meat back in the pot.

Add water (will depend on size of pot) water needs to be higher than the meat.

Add potatoes.  Simmer on low heat for 1.5 – 2 hours or until meat and potatoes are tender.

Add garlic, tomato paste, beef bouillon cubes and onions.  Bring to a boil. Add more water if desired.

Add mushrooms, carrots, celery, Guinness, McCoy’s THIS and thyme.  Simmer on low heat for 1 more hour.


To add more spice. Serve with McCoy’s Thick Hot Irish Sauce on top as well.

Rare Irish Stuff – Pub Decor

If you’re doing some decorating I came across a great resource. Rare Irish Stuff. They have posters, metal signs, photos from of your Irish hometown, brass items for the wall and some incredibly rare collector items.  The one that caught my eye was this piece of John F. Kennedy memorabilia.

Molly Malone’s Irish Pub and Restaurant – Kentucky

I’m from Chicago and there’s no shortage of Irish Pubs here but when I travel south I like to make note of good pubs en route.  I’m planning a trip south soon and will be heading straight through the heart of Louisville, Kentucky.  Louisville is rich in Irish heritage.  They also have a pretty killer Irish Festival every year too but I’ll save that for another blog.

Most people don’t realize how close Louisville is from Cincinnati, OH.  It’s roughly and hour and half drive.  This is important if you’re a serial Pub scouter like me because in this scenario I stumbled upon a set of three authentic Irish owned and operated Pubs managed by the same people.  

Molly Malone’s has three locations and one is at the foot of the Roebling bridge in Roebling Point, Covington, KY, across the river from Paul Brown stadium & the Great American Ball Park of Cincinnati.  The other two locations are ten minutes from each other in Louisville and St. Matthews.

For those looking for an executive summary: Great Food, Great People, Sports on TV, Live Music – Irish Music, Bluegrass Jam sessions, Karaoke and DJs too.

They all three carry the same great menu.  Everything from Irish Mussels (no not the beer muscles you get after ten pints), corned beef cabbage  Irish lamb stew, fish and chips and shepards pie to name a few. Why change a good menu. The consistency of the food among the three is a big plus.

They have a winning sandwich of the 2013 Polly Campbell’s “Sandwich hall of fame.” The Fish Sandwich; 6oz fillet of beer battered north Atlantic cod on a lightly toasted marbled rye bread with lettuce, tomato, onion & topped with Molly’s own tartar sauce.

However there are unique qualities about each of these pubs so I recommend you visit their website and explore their respective “About” and “Calendar” pages for each location if you’re planning a visit.

I particularly like the outdoor seating and live Irish music.  The Covington location (closest to Cincinnati) has live Irish Music on Tuesdays and Monday’s it has a Bluegrass Jam Sessions @ 8pm–Featuring Northern Kentucky’s best bluegrass musicians playing in-front of the fireplace on Molly’s 1st Floor. Again check their website it’s very up to date and informational.

So this summer I’ll be making a pass at one, two or maybe all three of these pubs during my travels.  Their self described description probably sold me the most. ”Deliver us from theme park-style bars. An Irish pub should be what an Irish pub is: a friendly neighborhood gathering place. Molly Malone’s in Covington has the atmosphere down. Couples gather at the bar, knots of friends huddle around the bar tables, and the burble of conversation is constant.”
