Blue Cheese Mushrooms – THE IRISH PUB COOKBOOK


Ok there’s probably three foods I want in unlimited supplies if stranded on a deserted island. Mustard, cheese and mushrooms. So it’s no wonder why the next recipe I decided to cook out of the awesome cook book – THE IRISH PUB COOKBOOK uses all three!

Blue Cheese-Stuffed Mushrooms with Marmalade-Mustard Sauce

Oh good lord, my mouth is watering just writing that title.

I’m not going to go through every recipe in this book but I’m going to cherry pick the ones that stand out to me. Granted what stands out to me and what might stand out to anyone else are probably two entirely different outcomes.

It was fairly easy to make. I do recommend making the Marmalade-Mustard Sauce last. It uses an orange marmalade that gets hard when cooled. In my opinion its best to do it last. Only takes a few minutes to make it and serve it warm.  I posted pics below of the sauce in some ramekins.

Keep in mind I’m FAR from being a chef or a half way decent cook. These recipes are well written and easy to follow.

The taste… very tasty. You get that normal burst of water when you bite into the mushroom that you get from most deep fried mushrooms. The inner filling is a cheese mixture that works and blends together nicely after its heated.


If I make these again I will probably add sliced Jalapenos to the cheese mixture to get a sort of Mushroom/Jalapeno popper thing going.  Even without the spice this makes a great appetizer.
