Irish Mexican Eggs

Compliments of Ainge Earney…. Enjoy! Keep in mind what makes them Irish is topping it off with McCoy’s THIS!
Preheat oven to 350
Bake 10-15 Minutes
12 servings
105 -125 calories per servings
6 eggs
6oz-8oz of Mexican blend sherrded cheese
3/8 cup of jalapeno (drain well)
3/8 cup green chilies (drain well)
The chilies and jalapeños are about 3/4 cup when you combine them. I do not recommend that you use CANNED jalapenos or chilies it is not as good. The jar ones are much better!
Whisk the eggs up until fluffy then add the rest of the ingredients.
Grease an 8×8 or 9×9 glass pan, pour in mixture, and bake 15-20 minutes (or until firm). Let sit 10-15mins before cutting or it will end up like scrambled eggs!
Serve warm and add McCoy’s THIS to top off the perfect eggs!
