McCoy’s Spicy Irish Stew Recipe

We put our own Irish Stew recipe to the test. We entered the below recipe into the World Irish Stew Championship ( http://www.worldirishstewchampionship.com )

We didn’t win the grand prize but we made the short list. If anyone is looking for a culinary travel adventure I highly recommend visiting the Só Sligo Food and Culture Festival.

McCoys Spicy Irish Stew

Spicy Irish Stew

Ingredients:

2 tablespoons of olive oil

2.5 pounds of stewing beef

4 beef bouillon cubes

1 tsp salt

1 tsp freshly ground pepper

1 tsp of cayenne pepper powder

1 ½ large onions chopped

½ tsp minced garlic

2 tablespoons tomato paste

2 cups carrots chopped

6 petite red potatoes cut into pieces.

1 stalk of celery chopped

½ pound of sliced or chopped mushrooms

1 bottle of Guinness stout

28oz of diced tomatoes

1 sprig thyme

1 tablespoon of McCoy’s Thick Hot Irish Sauce

McCoy’s THIS – Thick Hot Irish Sauce – 8oz Hot )

Heat oil in large pot.

Mix salt, pepper, and cayenne pepper in a bowl and mix. Season and sprinkle the mixture over the meat evenly.

Add meat to pot in heated all and brown on both sides then remove. Don’t do all the meat at once.  Small portions at a time until completed. After completed place all the meat back in the pot.

Add water (will depend on size of pot) water needs to be higher than the meat.

Add potatoes.  Simmer on low heat for 1.5 – 2 hours or until meat and potatoes are tender.

Add garlic, tomato paste, beef bouillon cubes and onions.  Bring to a boil. Add more water if desired.

Add mushrooms, carrots, celery, Guinness, McCoy’s THIS and thyme.  Simmer on low heat for 1 more hour.

 

To add more spice. Serve with McCoy’s Thick Hot Irish Sauce on top as well.
